I don’t know if you remember in a previous post I had mentioned that I had joined Icing Smiles. I also have joined Cakes Against Cancer for Kids.

Last August, I had received my first call to action. I was asked to make a chocolate TMNT cake for a little four year old boy named Gavin, fighting neuroblastoma. I jumped at it, and made what I hoped was a very special cake for a very special boy. The family is from West Virginia, and they moved to Philadelphia, Pennsylvania to be closer to CHOP. Gavin was napping when I dropped the cake off, so I didn’t get to meet him, but Mom is a very sweet, loving person, as are all of the grandparents I met that day.  For some reason even though I never met him,  Gavin tugged at my heart strings. At first I thought it was just because he was a sick little boy, that I got the joy of making him smile. But I’ve had 2 more little boys since then, another 4 year old with cancer, and a 1 year old with pulmonary hypertension, and Gavin still stuck out for me.

Just last Sunday morning, Gavin’s mom contacted me to see if I could make a Celebration of Life/ 4 1/2 birthday cake for Gavin. They were looking for a sand castle cake, as Gavin has been having a blast playing in the sand at the ocean lately.  See, he’s been through all of the chemo therapies that would treat his cancer, and none of them worked. They did have one last hope though. There is this chemo, that is still in the trials. Ultimately, their insurance denied them, but the drug company accepted them! They would grant them financial aid to help them pay for the new chemo. All of us…close friends and Facebook friends rooted for Gavin, and was grateful that he was accepted, this meant that not all options have been exhausted…and there was HOPE.

Yesterday morning (Thursday) Mom texted me…How fast can  I make the cake?
What??  What happened to Gavin that she’s asking me this??!?
Mom then explained that Gavin had suffered a stroke, and was now actively bleeding in his brain.
I did what anyone would do for a little boy who’s family desperately needed a smile, I packed up my computer, and left work to finish Gavin’s cake.
I called a good friend of mine (who has no experience making/decorating cakes, except what I’ve shown her) and we went to work. She would ice and “sand” one cake, while I would ice and fondant another. I knew this was a race against time. I couldn’t have gotten Gavin’s cake finished in time, if it weren’t for Wendy. I know she doesn’t think what she did was much, but to me it meant the world.

Hubby and I were on the road by 6:30 pm to deliver Gavin’s cake. Now anyone who lives in the Philadelphia area, especially this winter knows the pot hole Hell we live in now…well imagine trying to deliver a cake while trying to dodge all of those pot holes. Hubby deserves a medal for getting it there in one piece! We arrived a few minutes after 7. I totally understand security, and why we need it. There are innocent children in that hospital. The gentleman at the front desk wouldn’t let me up because I wasn’t on the visitor’s list. He called Gavin’s nurse, but she was busy. So mom’s friend, Heather came down to meet me. Heather also apparently works at CHOP. She wanted to usher me and hubby right up, but alas, they needed Gavin’s mom or nurse to give permission. A few minutes later Gavin’s nurse ended her shift, and as she was leaving, she saw us all waiting by the desk, questioned what was going on. She then told the gentleman at the info desk, “Gavin is actively dying, he has less than 24 hours, and has a DNR. He has no visitor restrictions. Anyone can see him, if they wanted to. Please let this woman up” That was all it took.

Heather escorted me and hubby up to Gavin’s room. Mom was laying in bed, holding Gavin in her arms. This would be the first time I would meet the superhero. And considering the situation, the last time.  I put the cake on the hospital table, that was decorated with a beachy table cloth, and had a fishnet on it, with beachy plates.  I went to take the cake out of the box and mom just stared and with tears in her eyes said, it’s just what I had imagined.  The room was filled with so much love, you could feel it. I felt very special to be a part of this, to be able to feel the love in that room, it was a privilege. Everyone there sang a quiet Happy Birthday (remember this was also a 1/2 birthday).

Gavin has a little brother, Greyson. Greyson noticed there just happen to be a sand shovel in the room. I forget who said it, but Greyson was given the go ahead…dig into the cake. It was the sweetest thing I’ve seen. They then proceeded to cut the remainder of the cake with the sand shovel…very appropriate.

Before we left, Mom said when things have calmed down, she’d like to do lunch. I’d love to get to know her. I know she’s a spectacular woman, and I’d love to hear first hand about Gavin.

It is now 3:00 pm. I haven’t heard any news on Gavin yet. Then again, I’ve only met the family twice. I don’t expect them to contact me, but I can’t stop thinking about them and him. The Morris family will be in my prayers.

Tosha, I can’t wait to do lunch and get to know you better. I don’t know any other mother out there that’s as strong as you.
God Bless the Morris family, and may God welcome Gavin with open arms and hold him tenderly until he can be reunited with his family once again.

Update:
Today is March 3rd, Gavin is still with us. He is being  Gavin Strong. He is comfortable in mom’s arms. Please continue to pray for Gavin and his family.

UPDATE:
March 10, 2014
Gavin traded in his superhero cape this morning for angel wings. He will forever be in my thoughts and prayers. I wish Tosha, Chad and their family all the strength they will need to get through this very difficult time.

Mother’s day, just because…

Posted on

The assistant principal at our school wanted to get a cake from me. She was just NEEDING a home made cake! So she made up an excuse…Mother’s day was just around the corner. All she asked for was chocolate, pink background, brown stripes, with polka dots.  The filling was Ghirardelli dark chocolate buttercream, (YUMMY!) and this was my first time making a bow made from chocolate (thanks Shop Baker’s Nook for the tutorial!) I think the assistant principal finished this cake in record time! (she’s as big as a chocoholic as I am!!)

1st Holy Communion

Posted on

My neighbor asked me to do her son’s First Holy Communion cake. It was great, because Kieran came over to my house, and we went through pictures of my cakes, and we looked on the internet. He picked out exactly what he wanted! Talk about a kid who knows what he wants in a cake! So this is Kieran’s design! Congratulations Kieran!

Still can’t rotate images 😦

Happy Birthday Sofia

Posted on

Remember for Audrey’s birthday, I made tie dye cupcakes for her to take to school? Well, I had some extras, and took them to work. (hey the key to getting skinnier is to make everyone fatter, right?!? 😉 ) Well, because of those cupcakes, I got an order from a teacher to make her daughter’s birthday cake. She wanted a cake exactly like the cupcakes…Tie dye cake, with a springy feel…grass, flowers, etc. I was having a hard time deciding what to do with the sides of the cake. The cupcake, I did nothing, because it had the springy liners. So I decided to experiment with chocolate…I poured chocolate into a sheet pan, and ended up making slats of wood! It looked very cool! Hopefully WordPress will allow me to flip these photos, so you can see them correctly!!

Noah’s Ark

A co-worker of mine was about to become a first time grandmom. How exciting is that!?! She wanted a cake that was as special as her first grandchild. They wanted the baby to be a surprise, so they didn’t know the gender. I was asked to make a Noah’s Ark themed cake to match the crib sheets! This was a blast making all of the animals, it was also a HEAVY cake! I had to deliver in 2 pieces and set up on location. The cake itself was chocolate with Oreo buttercream icing/filling…Yummy!!
Enjoy!!

Sadly, I cannot flip these either 😦

Peyton’s Birthday!

Posted on

I have a very good friend who has a sweet and sassy granddaughter! I made Peyton’s Tinkerbell birthday cake last year…click here to see it. This year, they were having her birthday at an aquarium! How cool is that!?? So “Under the Sea” theme it is! This cake was really fun to do! I researched salt water fish, and made a bunch of cool looking fish, they were hand made from gumpaste. The shells and starfish are all made of candy.  For some reason, WordPress will not let me turn the images so you can see them right side up, so this will have to do. 😦

Audrey’s 4th Birthday/Easter

Posted on

My beautiful niece turned 4 a week before Easter this year. Her mom decided instead of getting the entire family together twice in 2 weeks, that we would celebrate her birthday along with Easter. (Smart move mom!) But Audrey did want to take cupcakes into pre-school to celebrate her birthday with her friends. (something I never got to do for my kids, because their birthdays are in August) So I gladly made her tie-dye  spring themed cupcakes. I played with candy clay for the first time making these. The butterflies and flowers were both made of chocolate. It’s not as easy as I thought it would be…unless I got my measurements wrong when I made it.

Audrey asked for a Little Einstein’s themed cake. More specifically Leo and the Rocket. Knowing it was going to be on Easter, I only made a small 6 inch chocolate cake. I made the rocket out of RKT, then covered it in fondant. Because I hold Easter, I had a lot of preparations to do.  I was only going to make Leo…but at the last minute, I had a few free hours, so I made the other characters as well.

When Audrey came over for Easter, she gave me a hug hello, and asked where her rocket cake was…She then proceeded to say, “Aunt Linda, you’re the best cake maker!”  This is the reason on why I do this!  Later that night, she did warn me…”Aunt Linda, next time I want a Scooby Doo cake” .  So there’s my order, a year in advance. I’m sure it will change 10 times before then. Happy 4th Birthday Audrey.

Easter

I try to make special treats for Easter. I found some REALLY cute things online everywhere! I picked 2 things and ran with it! The first one, was carrots. (original design~Hostess with the Mostess) What I found online was sugar cones baked with cake inside of them. I gave it my own twist and stuffed the cones with cake truffles, then dipped them in orange chocolate. With the leftover cake truffles, I made “eggs”.  The carrots were good…but I will stick with the recipe I found, for next year. It was way too sweet for my taste! I’m sure the kids enjoyed the sugar high though! The second thing I made was chocolate chicks! (original design~Hungry Happenings) These were chocolate chicks with candy on the inside. These were too stinking cute! To go along with the chicks, I made chocolate nests. You’ll see in the pictures everything was too cute!

Dots Birthday!

image-03

I was asked to make a Dots cake for our superintendent’s birthday. Apparently Dots is a major food group for her! I wanted to have it be a polka dotted cake inside, but I’ve never tackled that. So trial cakes I make…and they looked like they had the measles. All of the polka dots rose to the top. Horrible! I posted my issue on Facebook, to a great group of people called Shop Bakers Nook. After a few days, I had a new recipe. More trial cakes (5 in total) trying out different suggestions, and finally I got it! Now of course, knowing me, I have to take things one step further. I wanted each dot to have it’s own flavor, green be lime, yellow- lemon, you get the idea. So I left the water out of the recipe, and divided the batter up in 5 equal parts. I zested what I could in fruit, and juiced them (oranges, limes, lemon) I bought frozen strawberries, and let them thaw out. So in place of the water in each bowl, I put in the zests and juices. For the strawberries I used the juiced from when they thawed, then I chopped up the strawberries and mixed that in. When all of the balls were half baked, I made the cake batter and put the balls in there and prayed, for an hour that it wouldn’t have the measles! Imade the fondant and butter cream while that was baking, then made most of the little parts.

Whew, yes this took me all day, Literally! I was in the kitchen from 12-8 doing all of this .

The next night was the fun night! The pan I baked it in was huge, so time to cut it in half and stack. My mother in law bought me a really neat tool for Christmas. I can’t find a picture of it, but picture a completely flat frying pan, now put a bent handle on it. It’s meant for moving cakes, that was my best friend! So time to put it together and decorate! I love that hubby got me an airbrush. It lets me put the tiny details on a cake that I normally wouldn’t be able to!

American Citizenship

I work in our local school district. For a few years now I’ve known Ralston. He’s a Jamaican gentleman who always calls me Miss, with that strong Jamaican accent! Well, Ralston did something the other day, that I don’t think 3/4 of Americans can do…He passed the American Citizenship test.
I was asked by a teacher if I would make his cake. I knew I had the perfect cake in mind. I made the American Flag cake, with the red and white petal effect. I then took the leftover cake, and made red-white-and blue cake pops. Each one flavored a different flavor.

Congratulations Ralston, job well done!
